Delicious Low Fat Meals!

I'm not one to diet, or even exercise, but Appetite for Reduction has really inspired me! This cookbook has amazing, easy to prepare recipes. Isa Chandra Moskowitz is my GOD! ;)
Here is my take on her baked falafel recipe. I turned it into a yummy salad with spinach, tomatoes, cucumbers, carrots and cilantro.

I finally got over my fear of nutritional yeast based "cheese" sauces. This is the BEST vegan Mac and Cheese I've ever had. I love this dish!
