Cupcakes Revisted

When I first bought Isa Chandra Moskowitz's book Vegan Cupcakes Take Over the World I went a bit cupcake crazy! Here are some of the recipes featured in the well as one of my own versions!

1. Chocolate Covered Cherry cupcake

2. Peppermint Patty cupcake

3. Cookies and Cream cupcake

4. Coconut Lime cupcake

I've tried many of the others in the book as well. One of my favorites is the peanut butter chocolate cupcake. Oh! And the chocolate orange cupcake....I could go on and on.

What's your favorite cupcake flavor? :)

Yum yum yum!

I was going through some of my pictures and I found my take on the yule log! I didn't have a jelly roll pan so I had to improvise. I remember it tasted so decadent! :) Just the way I like it. I can't for the life of me remember where the cake recipe came from but I do believe I used the buttercream icing from Vegan Cupcakes Take Over the World. I'm seriously looking forward to the holiday season so I can make this tasty treat again!

This can't be...

I'm so stressed out right now! I found out today that I was denied extended unemployment benefits. I'm not even sure why. I don't know what I'm going to do. I've been actively searching for a job for a year now! Out of the thousands of applications I have only been granted about a dozen interviews and none of those amounted to anything. I'm behind on my bills and I have no income now. I don't know what's going to happen to me...

Just some of my favorites...

Here are some pictures that I enjoy! The first picture is of a little fairy who watches over one of my flower/herb gardens. :)

A large patch of mushrooms I found in my yard one day. I love mushrooms (to admire, not to eat)!

Tibet munching on some freshly cut grass. He sure does love being outside!

What a washcloth!

I made two new washcloths this week! The first one was a festive dragonfly themed cloth. The pattern I found online had a flaw that I didn't notice til I was finished...oh well! It's still cute. :) I sent it to a really good friend of mine.

The second one took three days to finish! Argh! It was time consuming but turned out well. It's a feather and fan pattern. I used a self striping yarn which makes it look like I spent more time on it than I did!

Whole World

Whole World Restaurant FINALLY reopened after the fire. Pat and I went to check it out for dinner. I decided to try something new (which I rarely do). I got the seitan gyro with a side of blue chips and pickles. Now I absolutely love seitan but not this time. Overall I was not happy with my choice although the chips and pickles were perfect! :) I will go back for brunch. Brunch is always great!
